I LOVE energy bites! Have you heard of them? They are a simple snack that you can throw together in just a few minutes – no baking required!
I first tried energy bites when working at a camp. They were a huge hit with both the campers and staff. After seeing how easy they were to make and finding out I didn’t need to bake them – which was ideal because it was HOT outside and I DIDN’T want to turn on the oven – I knew this recipe was a keeper!
Another great thing about energy bites is that you can adjust the recipe according to what you like. After some searching on the internet, I found the perfect combination for me at GimmeSomeOven.com:
- 1 cup dry old-fashioned oats (large flake oats)
- 2/3 cup shredded unsweetened coconut
- 1/2 cup ground flaxseed
- 1/2 cups semi-sweet chocolate chips
- 1/2 cup peanut butter
- 1/3 cup honey
- 1 tsp vanilla
This recipe makes about 25 balls.
Try it out, they’re delicious! But of course, if you’re not a chocoholic like me (WHAT?!), you can replace the chocolate chips with dried fruit or nuts. The peanut butter can also be replaced with other nut or seed butters. Have fun with it – just remember when you’re tweaking the recipe that you need enough binding ingredients (peanut butter) to keep everything together.
Now the moment you’ve been waiting for…. Here is how I prepare my batch of energy bites to last me for days….
1. Measure the ingredients and put them into a big bowl.
2. Mix the ingredients together with a large spoon.
3. Time to get your hands dirty - take about a tablespoon of the mixture into the palm of your hand, place your other palm on top, and start rolling into balls to create bite-sized snacks.
4. Store in an airtight container in the fridge until you’re ready for your next bite!
Because they are packed with energy-rich ingredients, you only need 1 or 2 to give you a boost! They’re great as an afternoon snack especially if you pair them with some fruit like berries or an apple. These bites have fibre and protein to keep you full until your next meal and also satisfy that sweet tooth!
So what are you waiting for?! Grab them out of the fridge and have a bite OR put them in a container/ bag and take them with you wherever you’re heading next! Enjoy!!
