Muffin Mania was my favorite go to cook book when my
children were growing up. This book was
first published in 1982 and I got my copy for Christmas in 1983.
The book contained more than 60 different muffin recipes for all occasions. This lifesaver book for a young mom sending lunches to school was written by 2 sisters, Joan Pauli and Cathy Prange of Kitchener. Now I use this book to make mini muffins for my grandson’s nutrition breaks in Kindergarten. One of our favorite recipes is the Banana Oatmeal Muffin recipe.
Banana Oatmeal Muffins |
I have modified the recipe by adding some whole wheat flour
to make the muffins a healthier choice for children.
Banana Oatmeal Muffins
1 cup All Purpose Flour
1 cup Whole Wheat Flour¼ cup White Sugar
1 tsp. Baking Soda
2 cups Sliced Bananas
1 Large Egg
1 cup Rolled Oats
1 cup Milk
¼ cup Vegetable Oil
1 tbsp. Baking Powder
½ tsp. Cinnamon
Dash of Nutmeg

In a large bowl mix Flours, Sugar, Salt Baking
Powder, Baking Soda, Cinnamon and Nutmeg.

To soaked Oat Mixture, add Oil, Egg and Bananas

Add wet mixture to dry ingredients and stir only
until the flour is moistened.

Fill Muffin papers and bake at 375 degrees F for
20 minutes
These muffins freeze well so they can be popped into lunch bags whenever you need them.
If I have bananas in the freezer I will often use them in place of sliced bananas. It usually takes between 3 and 4 thawed bananas to make up 2 cups. Adapted from Muffin Mania
