Slow Cooker Chicken Marsala





I love easy slow cooker meals. You know the ones - no cooking required just basically throw everything in and let the slow cooker do its magic! This meal was not only delicious but easy to prep in the morning. And when you get home the little bit of prep needed is just the perfect amount of time to make a couple of easy sides.

Chicken Marsala

Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 tsp. black pepper
  • 1/4 tsp. salt
  • 1 pkg. sliced mushrooms
  • 1 cup Marsala cooking wine (or chicken stock)
  • 1/2 cup cold water
  • 1/4 cup cornstarch
  • fresh parsley, chopped (optional) 
Directions
  • Lightly grease your slow cooker.
  • Place chicken in the slow cooker and season with pepper, salt and minced garlic. 

  •  Top chicken with mushrooms and Marsala wine. 
 
  • Cover and cook for 6 hours on low.
  • Place water and cornstarch in a leak proof contain and shake until smooth.
  • Use a slotted spoon to remove chicken from the slow cooker and set aside on a plate.
  • Whisk the cornstarch mixture into the sauce in the slow cooker. 
 
  • Place chicken back into the slow cooker. Turn heat to high and cook until sauce has thicken about 20-30 minutes. 
    • Use this time to make a couple easy sides. Try pasta or rice with your favourite green and orange vegetables or a side salad.
  • Sprinkle chicken with parsley and serve.
We enjoyed this chicken over pasta with green beans.
