Kale Caesar with Lemon Parmesan Dressing

This take on a caesar salad is a delicious way to eat Kale! Kale is a healthy leafy green that is a source of Vitamin A, C, K and Calcium.


1 head Kale, washed, tough stalks removed
1/2 red onion, thinly sliced
croutons (optional)

For the dressing
1/2 cup olive oil
Juice and Zest of 1 lemon
1 tsp worcestershire sauce
1 tsp dijon mustard
1/4 cup grated parmesan cheese
1 clove garlic, minced
dash of black pepper

To Prepare the salad:

  1. Cut kale leaves into bite sized pieces and add to large bowl, along with red onion.
  2. For the dressing, whisk together olive oil, lemon juice, lemon zest, parmesan cheese, garlic, dijon, worcestershire, and pepper until well combined. 
  3. Toss the kale salad with the dressing at least 5 minutes before serving. This will help to soften the kale.
