Roasted Chickpeas






Ingredients:
 
Can of chickpeas, rinsed and drained thoroughly.
1 tbsp olive oil
½ tsp Chili powder
½ tsp Paprika
½ tsp Garlic powder

Directions:

Preheat oven to 400°F. Spread out chickpeas evenly on parchment paper lined baking sheet.  Bake for 6-8 minutes to dry out. Add chickpeas to mixing bowl and mix in olive oil. Put them back on a parchment paper lined baking sheet. Roast for about 40-45 minutes. Return to mixing bowl.

Mix together dry seasoning in small bowl. Sprinkle seasoning mix over the roasted chickpeas. Stir to coat. Return to parchment paper lined baking sheet and roast for 5 minutes.
 
Once cooled completely, store in an air-tight container for a few days.  Use as salad toppers or alone as a snack. Great for lunch boxes at work or school!
