Cool Down with Soup this Summer






Soups have always been one of my favorite dishes. Especially during the long winter months, as the weather gets cooler, I look forward to making warm, hearty soups that makes me feel warm and cozy. This year I thought why not have soups in the summer?
If we can warm up with soup in the winter, maybe we can also cool ourselves with soup during the hot summer months! I started scouting for recipes and soon enough, using fresh, local and seasonal fruits and vegetables, my kitchen became an experimental zone for summer soups!

Apples are in season pretty much all year nowadays! Since I am in the mood for experimenting, I wanted to see how apples would turn out in a soup! I took inspiration from “Archana’s Kitchen” (one of my favorite blogs) and decided to try her recipe on a cool, refreshing and healthy curried apple celery soup…

Curried Apple Celery Soup
Ingredients:
  • 2 stalks of celery roots, roughly chopped
  • 2 apples, peeled and roughly chopped (I used Gala apples)
  • 1/2 cup milk
  • 1/2 cup water (or low-sodium vegetable broth)
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon cinnamon powder
  • 1 tablespoon oil
  • Salt and crushed black pepper to taste


Directions:

Heat oil in a pan. Add in chopped apples, celery and spices (cumin and cinnamon powder). Sauté the mixture for about four minutes - just until the celery and the apple turns a little soft. 



Stir in the water and milk and let the soup boil. Make sure to keep an eye on the mixture, otherwise, the milk may boil over the pan. Once the soup boils for around five minutes (or you see foam form on top), take the pan off the heat and allow it to cool. 


Once the mixture cools, blend the soup and add salt and pepper. And you’re done!! 

I garnished the soup with some cilantro, which added a nice flavor. It is a savory soup with a little hint of spices (but not spicy). You can have this soup chilled during the summer. You can also serve this soup warmed along with a dinner roll for the cold winters.
