Carrot Chips

  • 2 large carrots
  • 1/2 tsp vegetable oil
  • 1/2 tsp grated ginger
  • 1/2 tsp cinnamon
  • Preheat oven to 350 F
  • Wash and peel carrots.
  • Peel carrots into ribbons or cut into thin coins - try your best to make the chips the same thickness
  • Toss carrot chips with oil, ginger and cinnamon
  • On a parchment paper lined baking sheet place carrot chips in a single, flat layer
  • Bake for 10-12 minutes until lightly browned
  • Remove from oven and let stand for 3-5 minutes. This will help them crisp.
  • Enjoy or store in an air thigh container for 5-6 days.
