Grilled Vegetables

Grilling vegetables is my favourite way to cook vegetables in the summer. Not only is it quick and easy, they are delicious. This is one of our favourite vegetable combinations this time of year.



 
Ingredients
2 medium onions, cut into thick slices
4 peppers, cut into quarters
1 pound of mushrooms – I leave them whole or cut in half depending on how big they are.
2 Tbsp cooking oil (such as canola, vegetable or olive oil)
Fresh ground pepper

Directions




  1. Place vegetables in a large mixing bowl. Drizzle oil over top and sprinkle with pepper. Toss to coat.
  2. Grill on medium heat, turning often, until tender. I used a BBQ pan - the one with wholes in the bottom- to grill the vegetables but you can also grill them directly on the BBQ grates.



3.   Serve on their own or over a bed of your favourite greens. I served them with grilled buttermilk chicken - the recipe is also posted.
