Cooking from scratch is a common saying often heard...but what does it really mean?
It simply means cooking or making something from basic ingredients.
Cooking from scratch doesn't have to be elaborate, hard or time consuming. I mean it can be these things, but it definitely does not have to be. Sometimes the simplest things we make are the best.
Take this bruschetta mix I made last night. Simple and easy...it was made in five minutes and the most important thing its so delicious, it really is the taste of summer...so fresh!
I used up tomatoes and cherry tomatoes that were starting to wrinkle, the ones no one was going to cut up for a sandwich or grab for a snack. So I love love love this - using food instead of throwing it out.
I served it over grilled chicken with a side salad...sorry no picture it was an eat and run kind of night.
What is great about bruschetta is there are so many ways to enjoy it. Here are a few of my favourites:
- On whole grain bread or crackers with a little feta cheese
- Over some greens for an easy salad
- On a baked potato
- On fish tacos and
- On a hamburger
Easy Bruschetta
- 2 large tomatoes or 2 large handfuls of cherry tomatoes (or a combination of both), diced
- 1/4 cup red onion, minced (diced small)
- 1 clove of garlic, minced
- 4-6 large leaves of fresh basil, sliced thinly
- 1 tbsp. balsamic vinegar
- 1 tbsp. olive oil
- ground black pepper and salt to taste
- Add all ingredients into a bowl and gently stir.
- Place in the fridge, covered for about 30 minutes.
