Slow Cooker Turkey Taco Filling (& Taco Salad Recipe)


Here's a versatile recipe for turkey taco filling made in the slow cooker. Use this to make turkey tacos or one of my favourite weekday meals, taco salad.

Ingredients
  • 1 lb lean ground turkey
  • 1 small or 1/2 large onion, diced
  • 1/2 tsp salt
  • 1 Tbsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 1/2 cups canned black beans, drained and rinsed
  • 3/4 cup frozen corn
  • 1 can (500mL) stewed tomatoes with green chilis
For taco salad (use any of the following ingredients):
  • lettuce, such as romaine
  • onion, diced
  • tomato, diced
  • bell pepper, diced
  • cilantro, chopped
  • pickled jalapenos
  • lime juice
  • diced avocado or guacamole
  • cheddar cheese, shredded
  • salsa
  • sour cream
  • tortilla chips
Directions:
  1. Add 1 tsp vegetable oil to a skillet and heat on medium. Saute onions for 2 minutes until they begin to soften. Add ground turkey and break up with a spoon. Add salt, chili powder, cumin, garlic powder, black pepper and stir into turkey. Cook for 5-10 minutes until turkey has started to brown.


2. Transfer turkey to a slow cooker. Add black beans, corn, and tomatoes. Stir to combine. Cover slow cooker and cook on low for 5-6 hours. Use mixture for tacos or taco salad.
 
















3. For taco salad, place chopped lettuce, onions, tomato, bell pepper, and cilantro in a bowl. Dress with lime juice. Add some broken tortilla chips on salad, and spoon taco meat on top. Garnish with cheese, salsa, guacamole, and sour cream.
