Cilantro Lime Chicken


We all love easy things and this recipe couldn't be easier. The bonus is it's also delicious!

I'm always amazed at how much time can be saved by working just a little bit ahead.

When chicken breast and thighs go on sale I purchase the club pack and freeze them in meal size portions in freezer storage bags. Usually this is where the process ends.

However this time I made a double batch of this cilantro lime marinade and added it to the chicken before freezing. This allowed the chicken to marinade while it was freezing and defrosting. It also made a week night dinner just that much easier.

I baked the chicken thighs which worked great! But this recipe will also be delicious on the grill this summer - can't wait!

Recipe
  • 1/3 cup cilantro leaves, chopped
  • 1 tbsp garlic, minced
  • Zest of 1 lime
  • 1/2 cup lime juice
  • 1 tsp black pepper
  • 1/8 tsp salt
  • 1/4 cup olive oil
Mix all ingredients together. Pour over chicken and allow chicken to marinade for at least 20 minutes.

Bake boneless chicken thighs at 425 F for about 25 minutes or until the internal temperature is 74 C (165 F). I also turned them over about half way through. I think this would work great in the slow cooker - if you try it let us know how it turns out.
