Salad in a Jar...Two Ways!


Salad #1 - Apple Cranberry Salad
1 pint size jar with lid and screw band
1 tbsp. salad dressing
1/4 cup apple pieces
1 tbsp dried cranberries
1 tbsp pecans
2 tbsp feta cheese
1 cup greens, such as spinach or arugula

Salad # 2- Lunchbox Salad
1 pint size jar with lid and screw band
1 tbsp salad dressing
2 tbsp carrots
2 tsbp diced cucumber
2 tbsp chopped pepper
2 tbsp cheese, cubed
1 cup greens, such as spinach or arugula

Instructions
1. Add salad dressing to base of jar. Add in most firm (least absorbent) vegetable first, then layer other vegetables and ingredients into the jar, finishing with lettuce last. Note: If you are using sliced fruit (such as apple or pear) add these in first and mix with the dressing to prevent browning.
2. Empty contents of jar into a bowl and mix to enjoy.

Note: Salads will last longer if kept upright so the dressing doesn't wilt the greens.
