This take on a caesar salad is a delicious way to eat Kale! Kale is a healthy leafy green that is a source of Vitamin A, C, K and Calcium.
Ingredients
1 head Kale, washed, tough stalks removed
1/2 red onion, thinly sliced
croutons (optional)
For the dressing
1/2 cup olive oil
Juice and Zest of 1 lemon
1 tsp worcestershire sauce
1 tsp dijon mustard
1/4 cup grated parmesan cheese
1 clove garlic, minced
dash of black pepper
To Prepare the salad:
- Cut kale leaves into bite sized pieces and add to large bowl, along with red onion.
- For the dressing, whisk together olive oil, lemon juice, lemon zest, parmesan cheese, garlic, dijon, worcestershire, and pepper until well combined.
- Toss the kale salad with the dressing at least 5 minutes before serving. This will help to soften the kale.
