Salad:
1 can of chickpeas, drained and rinsed½ of a cucumber, diced
1-2 tbsp fresh (minced) or dried mint
1-2 tbsp green onion or chives, minced
1/3 cup feta cheese, crumbled
Dressing:
Juice from a lemon
1/3 cup olive oilPinch of cumin, salt and pepper to taste OR use any store-bought dressing that you prefer
In a large bowl, combine the chickpeas, cucumber,
chives/green onion, mint, feta cheese. For the dressing, mix together oil, lemon juice and
seasoning then add to the chickpea mixture. Mix and Enjoy.
