Potato and Cheese Frittata




This is a one of my favourite go to quick meals. It's a cinch to make, uses ingredients I always have on hand and there's only one pan to clean!


Ingredients:
½ dozen eggs, whisked
1 cup of milk or water
1 cup grated cheese
2 potatoes, washed and diced
1 tbsp. oil
Dash of salt and pepper
Dash of a dried herb like rosemary or basil  

Directions:
Heat oil in pan on medium-high heat. Add potatoes and dried herb. Cook until soft to the touch and nicely browned, about 10 minutes. Preheat broiler to high.

In a small bowl add milk or water to whisked eggs. Mix in salt and pepper.  

Evenly distribute potatoes in the pan. Pour egg mixture over the potatoes in the pan. Sprinkle the grated cheese on top. Cook on the stovetop on low for 5-7 minutes, until lightly browned on the bottom but not fully set.

Wrap handle of pan in foil if not using an oven-proof pan. Put under the broiler for about 3 minutes and check on it every once in a while, until lightly browned and set on the top. Leave it in the pan to serve.
