Garlic chicken with roasted sweet potatoes




This one dish meal is one of my favourites. It has very few ingredients, is easy to put together and can be put together ahead of time. Most important of all, it tastes great.

The original recipe for this dish is from Canadian Living. I use the same ingredients as the original recipe but I adapted how it is put together.

Ingredients

About 5 lbs chicken pieces. I use thighs and drumsticks or buy chicken legs and split them into thighs and drumsticks.
3 medium sweet potatoes
8-12 cloves of garlic, peeled
Juice of 1 lemon or 3 - 4 tbsp lemon juice
2 tbsp vegetable oil
1 tbsp dried rosemary, or 3 tbsp minced fresh rosemary
Salt and pepper

What to do
Remove the skin from the chicken.
Scrub and peel the sweet potatoes and cut them into equal size slices or chunks.


In a small bowl, whisk together the lemon juice, oil, rosemary, salt and pepper.
Put the chicken pieces, potato chunks and peeled garlic in a large pan. Pour the whisked ingredients over the chicken - potato - garlic pieces and gently mix until all the chicken, potato and garlic pieces are coated. 



If you have time, cover and refrigerate for at least 4 hours. For maximum flavour, it's best to do this but I have cooked it immediately after putting it together and it still tastes good.
Roast in 425 F oven until chicken is cooked (165 F) and potatoes are tender, about 1 to 1.25 hours.




The garlic cloves will be very tender and mild once they're cooked. Include a few cloves on each dinner plate. The cloves can be mashed together and spread over the chicken for a wonderful lemon-garlic flavour with each savory bite. Serve this dish with something green such as peas, green beans or a salad.
