Roasted Sweet Potato


This past summer I decided to serve baked sweet potato. We cooked them on the BBQ just the same way we would make a baked potato and they turned out better than expected!


I have since made them in the oven. The flavour from roasting them is delicious and they don’t need anything added to them.

Scrub the skins under warm water.
Prick with a fork.
I lined my baking sheet with parchment paper for easy clean up.

Bake at 425 degrees F for 45-75 minutes (depends on the size) until a fork can easily pierce through the middle.
Don't worry if they look a bit burnt - their not. 
Serve as it or scoop the flesh into a bowl and mash.
