This second recipe also uses turnips but this time we are adding Middle
Eastern Spices to a hearty vegetarian stew.

Stew.
Ingredient List
2 tbsp. vegetable
oil
3 cloves garlic,
minced
1 tbsp. minced
gingerroot
1 ½ tsp. ground
cumin
1 tsp. ground
coriander
½ tsp. Black pepper
1 large onion cut
in wedges
1 can (28 oz.)
diced tomato
2 cups diced
yellow turnip
2 cups thick
sliced carrots
1 ½ cups mushrooms
1 cup frozen peas
1 can (19 oz0
chick peas, drained (optional)
1 cup raisins
In a large saucepan, heat oil over medium heat: cook garlic and onion,
season with ginger, cumin, coriander and pepper, stirring for 2-3 minutes.
Add tomatoes, yellow turnip, and carrots and bring to a boil. Cook for 35 to 45 minutes or just until
tender, stirring occasionally. Add mushrooms,
peas, chickpeas and raisins. Cook for 8
to 10 minutes or till hot. Serve with
pita bread or plain rice. Makes 4-6
