30 Minutes or Less ‘til Dinner

September means summer life is over and it’s back to the reality of school and extra-curricular activities. I know this time can seem crazy and cooking maybe the last thing on your to do list. So we thought we would help you out with some of our favourite no fuss no muss meals – dinner in 30 minutes or less.

One of our favourites is tuna burgers with a garden salad. They are easy, quick, and delicious and I typically have everything on hand.

One trick I find helpful is to get out all the ingredients, measuring cups and spoons and a mixing bowl before you start

Tuna Burgers
2 cans of tuna, drained
1 egg
½ cup bread crumbs
1/3 cup minced onion
¼ cup mayonnaise
2 tbsp ketchup
½-1 tsp Italian seasoning (this time I used Old Bay. You could also try dill, margorum, or cajun seasoning)
1/8 tsp pepper
Dash of Worcestershire sauce

Use a fork to break up tuna into smaller chunks.

Add in bread crumbs, onion, mayonnaise, ketchup, seasoning, pepper and Worcestershire sauce. Mix together and taste. Add in more seasoning if needed. Once you are happy with the flavour add in the egg and mix well.

Form mixture into a ball and divide into four equal amounts.

Using your hands shape into four patties.

Pre-heat your non-stick frying pan on medium heat. When the pan is hot cook tuna burgers for 3-4 minutes per side or until cooked.

Serve on a bun or as an open face sandwich with a salad or a side of your favourite vegetables.

My trick to making a salad in a pinch – I always have fresh lettuce washed and waiting to be used in the fridge. Everyone in my house is more likely to make a salad when the lettuce is ready. I just added some carrots, tomatoes and any other vegetables we have.

Enjoy this dinner in 30 minutes or less!
