One of our
favourites is tuna burgers with a garden salad. They are easy, quick, and
delicious and I typically have everything on hand.
One trick I
find helpful is to get out all the ingredients, measuring cups and spoons and a
mixing bowl before you start
Tuna Burgers
2 cans of
tuna, drained
1 egg
½ cup bread
crumbs
1/3 cup
minced onion
¼ cup
mayonnaise
2 tbsp
ketchup
½-1 tsp
Italian seasoning (this time I used Old Bay. You could also try dill, margorum, or cajun seasoning)
1/8 tsp
pepper
Dash of
Worcestershire sauce
Add in bread crumbs, onion, mayonnaise, ketchup, seasoning, pepper and Worcestershire sauce. Mix together and taste. Add in more seasoning if needed. Once you are happy with the flavour add in the egg and mix well.
Form mixture into a ball and divide into four equal amounts.
Using your hands shape into four patties.
Pre-heat your non-stick frying pan on medium heat. When the pan is hot cook tuna burgers for 3-4 minutes per side or until cooked.
My trick to making a salad in a pinch – I always have fresh lettuce washed and waiting to be used in the fridge. Everyone in my house is more likely to make a salad when the lettuce is ready. I just added some carrots, tomatoes and any other vegetables we have.
