What can you do with one pound of ground beef other than
make hamburgers? Well you can make
Barley Burger Stew. The meat that make this great stew is pictured below.
I have been making this particular recipe since the 1970’s when my husband and I were students at University. Over the years I have sometimes added other vegetables but always use to tomato juice and pot barley as a base. My children and grandson love this stew. For busy Moms it is easy to double the recipe and put half in the freezer to use on a busy family night
Barley Burger Stew
1 pound of lean ground beef
1 cup chopped onion
1/2 cup chopped celery
5 cups of tomato juice
1 cup of waterpinch of salt
1 1/2 teaspoon of chili powder
1/2 teaspoon ground black pepper
1/2 cup uncooked pot barley
In a large saucepan, cook and stir the ground beef and onion
until the meat is brown and the onion is tender. Drain off the fat. Stir in the remaining ingredients, bring to a
boil. Reduce heat, cover and simmer until the barley is done and the stew is a
desired consistence, about 1 hour.
Makes 4 servings.

I often serve this stew with a nice fruit salad for dessert and then everyone is getting at least 3 of their daily servings of vegetables and fruit in one meal.
