Crock Pot Chili

There is just something about a bowl of pipping hot chili on a cold winter day that almost makes the snow and cold wind seem OK - I said almost!



Cooking with a crock pot can be really easy. The hardest thing for me is remembering to use it. I'm always on the hunt for new crock pot recipes.

This vegetarian chili recipe is easy to put together and since it cooks all day it's ready to enjoy the minute you walk in the door after work. This recipe also makes a lot so you can freeze some for another time.

Crock Pot Vegetarian Chili
  • 2 cans of kidney beans
  • 1 can of 6 bean medley
  • 1 diced onion
  • 1 diced green pepper
  • 2 cans of baked beans
  • 1 can of diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • ground black pepper to taste
  1. Drain and rinse well the kidney beans and the bean medley.
  2. Mix all ingredients into a large 6 qt crock pot.
  3. Cook on low for 6-8 hours.
