Our team at Diaries of a Dietitian include Shannon Edmonstone, Michele Hurd, and Amy MacDonald. We are all Registered Dietitians (RD) and work at Huron Perth Public Health. 

We started Diaries of a Dietitian to share our secrets of feeding our families. We have lived through picky eaters, struggled with school lunches and the dreaded question “What’s for dinner?”– just like you. We will provide you with meal and snack ideas that use whole foods, taste great, are low cost and use basic equipment and skill. We will also show you how to use leftovers to reduce wasted food. What’s to come? We are not sure! But we hope to share our successes and secrets with you, to help you in your journey of feeding your family.

photo of MicheleI’m Michele. I’m a mom with 2 boys, 15 and 17 years old, a husband and a chocolate labs (11 yrs). Many people assume that because I’m a dietitian, our family only eats healthy food and my kids eat everything. Well, not true! We don’t eat healthy all the time but I do try to make it happen most of the time. It helps that I like to cook and bake and that I can sort through all the nutrition misinformation out there. I’ll be sharing the good and the bad about my attempts to prepare tasty, nourishing food for a busy family.

Hi, I’m Shannon. I live in Stratford with my daughter, Hanna. I used to think my curse of becoming a dietitian was having a daughter who wouldn’t eat a single vegetable. Now that we are passed that –thank goodness! My goal is to get us through our busy (slightly over scheduled) weeks with healthy meals. I look forward to sharing my tips & tricks and little secrets with you!

I love food and enjoy cooking and baking, but with our busy household it can be tough to get a meal on the table. I'm looking forward to sharing my kitchen experiments, fun, and struggles.

I can’t think of anything I enjoy more than sharing a delicious meal with family and friends.  I spend a lot of time experimenting in the kitchen with new recipes that use healthy, whole food ingredients, and also taste great! I’m a firm believer that healthy food should (and can) be delicious and satisfying. I’m Margaret Ann, a registered dietitian, mom and grandmother. My daughter who lives 15 minutes away brings her family to dinner several times a month. At these meals I get to bring back treasured child friendly recipes and try out new ones. I skype with my son in New Zealand and use the webcam in my kitchen to share recipes and cooking techniques with him. This is a good way to share Canadian recipes with those far from home. My passion is food security and making sure healthy food choices are available for all residents of Perth County.

Photo of LauraHi, I’m Laura McCann.  My time at the Perth District Health Unit has been spent working as a summer student and a dietetic intern.  Prior to studying Nutrition and Dietetics at UWO, I completed the Culinary Management and Baking and Pastry Arts programs at George Brown College.  I’ve been happy to contribute my culinary skills towards the creation of some of the blog how-to videos. I’m excited to be a part of this blog, because like many, I am constantly looking for new recipe ideas which taste good, but are also part of a balanced diet.  I love the excitement of trying a recipe for the first time and wondering how it’s going to turn out.
