Spooky Halloween Foods

It’s party time! Halloween Party, that is.

It’s that time of year again - the holiday parent’s love to hate. Halloween! Who doesn’t like to see their kids all smiles and excited for a night of beautiful, spooky and goofy costumes and trick-or-treating. BUT all that candy has us wishing some houses were giving out more tricks than treats! Unfortunately, we can’t stop people from giving your kids sugar-filled Halloween candy, but we can make sure our Halloween Party is spooky, delicious AND healthy!

I’ve scoured Pinterest and the internet to find some healthy Halloween themed food ideas.

Thai-Spiced Pumpkin Deviled Eggs

A delicious Thai and Halloween twist on traditional deviled eggs.

What you need:
  • 6 Eggs
  • 2 Tablespoons thick coconut milk, cold or mayonnaise
  • 2 Teaspoons Thai Curry paste
  • 1 Teaspoon ketchup
  •  ½ Teaspoon paprika plus more to sprinkle
  •  ½ Teaspoon spicy mustard
  • ¼ Teaspoon Sriracha or other red chilli sauce
  • Salt to taste
  • For the pumpkin look - Paprika and 1 green onion

How To:
  1. Cover the eggs with an inch of cold water and bring to a boil. Boil for a minute, then cover and set aside for 10 minutes. Drain and then fill the pan with cold water. After 5 minutes, peel the eggs. Slice each egg length-wise and gently remove the yolks.
  2. Place the yolks and all the other ingredients in a small bowl and mash until very smooth. Mound the yolk mixture into the egg whites or transfer it to a zip lock bag and pipe it out. Wet your finger and pat the surface of the filling smooth. Using a toothpick draw lines to make the 'pumpkin' indentations. Sprinkle with paprika if desired. Cut up the green part of the onion to make tiny stems and add them to finish off the pumpkin look.

Graveyard Dip
This spooky layered graveyard dip is easy and delicious!

What you need

1st layer
1 can refried beans

2nd layer
2 cups light sour cream
1 pkg reduced sodium taco seasoning

3rd layer
1 cup salsa

4th layer
2 avocados, mashed
1 clove garlic, minced
2 Tbsp mayo

5th layer
1 bunch green onions, chopped

How To
In a small glass dish (you can also use a pie plate), layer beans, then sour cream mixed with taco seasoning, then salsa, then avocado mixed with garlic and mayo, then sprinkle the onions on top
Feel free to layer this dish in any order you want.

Chill at least an hour or so...until ready to serve. (Can be made a day ahead and kept, covered, in fridge.)
To make the tombstones and tree you just need 2 large tortillas. Cut out the shapes you want, place on parchment paper lined cookie tray, and bake at 350 until the tortillas are nice and brown.

Place the tortilla decorations in the dip shortly before you plan on serving it as they will go a bit soggy if they sit too long.
